Spicy Radish Salad

  

Kind of a quick pickle, or kimchi style salad which can double as a condiment or topping as well! I can think of so many things to eat it on; fish tacos, veggy burger, a salad, anything that needs a kick.

About 10 radishes thinly sliced on a mandolin 

Jalapeño, thinly sliced

About a quarter to half a red onion, thinly sliced

Clove of garlic, minced 

Tablespoon of Apple Cider Vinegar

Teaspoon of sugar

Teaspoon of pink salt

Teaspoon of lemon juice 

Healthy squeeze of sriracha

Whisk up the dressing first with the garlic, all liquids, sugar, and salt.

Then slice all the veggies, combine with the dressing, and toss!

Stick it in the fridge for at least 15 minutes and you’re golden!

Enjoy the cold, crispy crunch of the raddish salad! The only thing I might do different next time is maybe adding fresh ginger, honey, and fish sauce to get more umami 🙂
